About Us

Hello! I am Michele. author of Beyond Gluten-Free Cooking, and I am passionate about gut-healthy, allergen-friendly, anti-inflammatory foods and joy in finding new foods to taste and new recipes to mix up. I have fervently sought after more understanding in health, diet and nutrition for over a decade because of gut issues in my own family. The intensity of food reactions, especially in our precious little ones has driven my husband and I to seek God for wisdom, understanding, answers, and direction. God has been faithful and has answered many prayers, in his timing. I praise the Lord for giving me hope and courage to press through the challenges of compromised gut health, Lyme, SIBO and more.  I love serving my family as a godly wife and homeschooling mother of 5 children, gardening vegetables, fruit, and berries, and caring for and managing our flock of Khaki Campbell ducks and quail on our little homestead nestled in Amish country, Lancaster county.
