Roasted Carrots

Roasted carrots are super simple to make and taste extra yummy when you halve them before popping them in the oven. The colorful slices become even sweeter as they roast, bringing out their natural flavors. Just a sprinkle of seasonings and a drizzle of coconut or avocado oil is all you need to make these carrots your new favorite snack or side dish. Give it a try - you might be surprised at how deliciously roasted veggies can be!


  • 1lb. or 6-8 fresh medium-sized carrots with a bit of their green tops
  • 2 T. coconut or avocado oil
  • 1/2 tsp. salt
  • 1 tsp. dried cilantro
  • 1 tsp. sesame or hemp seeds


  1. Cut carrots lengthwise and rub with oil.
  2. Lay on a baking sheet  and sprinkle with salt, cilantro, and seeds.
  3. Roast at 400° for about 40 minutes.
