  • 3 c. quinoa, soaked for 8 hours, and cooked
  • 8 small fresh radishes, diced
  • 1/2 English cucumber, diced
  • 1/2 c. red, sweet, or green onion, diced
  • 1 1/2 T. lime juice
  • 2 tsp. apple cider vinegar
  • 3 T. avocado oil
  • salt, to taste
  • 1/4 tsp. dried dill weed
  • 1/8 c. fresh cilantro leaves or 1 T. dried cilantro


  1. Dice radishes, cucumber, and onion.
  2. Whisk lime juice, apple cider vinegar, avocado oil, and seasonings together.
  3. Stir in with the quinoa and the vegetables.
  4. Refrigerate if not serving immediately.
