Nightshade Free Red Salsa

Bright & Flavorful AIP Nightshade Free Red Salsa, an anti inflammatory dish for your summer events. Try a dallop over salad, tacos, or eggs or use as a dip for an appealing and healthy snack with grain free crackers.

 

Ingredients

  • 1 lb. carrot slices, cooked
  • 1/3 c. red beets, cooked and diced
  • 1 small onion, coarsley chopped 
  • 2-3 T. lime juice
  • 1/2 tsp. salt
  • 1/2 bunch fresh cilantro or 1-2 T. dried leaves
  • 1/4 tsp. allspice
  • 4 cloves crushed garlic or 1/2 tsp. garlic powder
  1. Blend all ingredients briefly in food processor until roughly chopped.
  2. Chill and serve. Flavor enhances with time; best made a day in advance.
