Ingredients
- 1 lb. carrot slices, cooked
- 1/3 c. red beets, cooked and diced
- 1 small onion, coarsley chopped
- 2-3 T. lime juice
- 1/2 tsp. salt
- 1/2 bunch fresh cilantro or 1-2 T. dried leaves
- 1/4 tsp. allspice
- 4 cloves crushed garlic or 1/2 tsp. garlic powder
Instructions
- Blend all ingredients briefly in food processor until roughly chopped.
- Chill and serve. Flavor enhances with time; best made a day in advance.
