Gluten-Free Cake Donuts

Ingredients

  • 3 eggs
  • ¼ c. coconut oil, melted
  • 2 tbsp. honey, maple syrup, or sugar-free syrup
  • ½ tsp. toffee liquid stevia
  • 1 ¼ c. almond flour
  • ¼ tsp. sea salt
  • ¼ tsp. baking soda
  • ¼ tsp. ground nutmeg
  • ½ tsp. ground cinnamon
  • pinch of cloves

Instructions

  1. Preheat oven to 350℉
  2. Mix eggs, coconut oil and sweeteners together.
  3. Add dry ingredients and mix well.
  4. Spoon or pipe into greased donut pans or silicone molds until ⅔ full.
  5. Bake for 10-15 minutes then remove from molds to cool.

Option #1 Donut Coating

  • 3 tbsp. coconut oil, melted
  • 2 tsp. ground cinnamon
  • ⅓ c. erythritol or favorite granulated sweetener

Instructions

  1. Mix ground cinnamon and erythritol together.
  2. Dip warm donuts into melted coconut oil and then immediately coat with the cinnamon and erythritol.

Option #2 Donut Coating

  • ½ c. powdered erythritol

Instructions

  1. Coat partially cooled donuts in powdered erythritol.
