Ingredients
- 3 egg whites, room temperature
- pinch salt
- 2 T. powdered erythritol or honey
- 6 canned or fresh peach halves ( if using fresh, poach 10 minutes)
- 2 T. fruit-sweetened raspberry preserves
- 1/4 c. soaked & dehydrated walnuts or pecans, chopped
Instructions
- Beat egg whites with salt until fluffy.
- Add sweetener.
- Place well-drained peach halves on ungreased pan, hollow side up.
- Drop about 1 tsp. raspberry preserves into each piece of fruit, topping with meringue.
- Sprinkle with chopped nuts.
- Bake at 275° until lightly browned.
