Raspberry Filled Meringue Peach Cups

Ingredients
  • 3 egg whites, room temperature
  • pinch salt
  • 2 T. powdered erythritol or honey
  • 6 canned or fresh peach halves ( if using fresh, poach 10 minutes)
  • 2 T. fruit-sweetened raspberry preserves
  • 1/4 c. soaked & dehydrated walnuts or pecans, chopped

Instructions

  1. Beat egg whites with salt until fluffy.
  2. Add sweetener.
  3. Place well-drained peach halves on ungreased pan, hollow side up.
  4. Drop about 1 tsp. raspberry preserves into each piece of fruit, topping with meringue.
  5. Sprinkle with chopped nuts.
  6. Bake at 275° until lightly browned.
